According to common knowledge, the term “organic” indicates farming methods that exclude the use of fertilizers, pesticides, herbicides, and synthetic chemicals with the aim of protecting the environment and the consumer’s health. Organic and mineral fertilizers are instead employed, such as sulfur and copper. The problems created by the use of synthetic fertilizers, such as soil, water, and food pollution and farmers’ exposure to toxic products, and soil depletion, explain the growing interest in organic farming methods. Land areas converted to organic means have increased eightfold in the last four years. France was the first European country at the beginning of the 1980s to standardize the methodology, followed in July 1997 by the European Community. Actually, Italy is taking on a primary role in the organic farming sector. Bologna holds the most important fair in this sector (SANA) and biological food producers in Italy are in continued expansion (today there already are more than 50,000).

A product is considered organic if at least 95% of the substances used in its cultivation are organic. The label should report the government authorization, the identification code of the producer/exporter, and the seal of one of the 9 controlling organizations recognized by the Italian Ministry of Agriculture (AIAB, BIOAGRICERT, BIOS, CCPB, CODEX, ECOCERT ITALIA, IMC, QC&I, SUOLO E SALUTE).

Organic agriculture is not a return to the past. It employs advanced methods such as, for example, crop rotation, the choice of varieties of plants best suitable to the environment where they are cultivated and most resistant to infection, etc.
The conversion from traditional to organic methods should be done in no less than two years, during which the land is cleansed of residues from chemical treatments undergone in the past.

The products of farmers who are in the process of converting to organic cultivation are under obligation to have on the labels the words: “products in conversion to organic agriculture”. The disadvantages of organic cultivation are the higher costs of production and the slightly inferior crop yield compared to the traditional synthetic methods of cultivation used today.

The advantages in terms of health are indisputable. The availability of fresh organic vegetable and fruit products has subsequently led to a wide range of processed organic foods which can be found on the market today.
